If there was ever a “cup of tea” cake that secretly acts like a macro-friendly meal, this is
it. Soft, spiced and cosy with that chai-meets-apple vibe, but with ~20g protein per slice
so it actually keeps you full – not just entertained.

The granola gives it this toasty little crunch, the apples keep it moist without being
heavy, and the cinnamon + ginger make the whole kitchen smell like you’ve got your life
together. I bake it on a Sunday, slice it into six and suddenly I’ve got a week of snacks
that taste like dessert but behave like fuel.
It’s the kind of bake you can eat warm out of the oven or straight from the fridge at 3pm
when you need something that feels comforting and functional. As always I prefer mine
with a 30 second zap in microwave and served with extra apple pieces.
Ingredients
- 1 cup all-purpose flour (I used GF)
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon of ginger
- 1/2 teaspoon salt
- 1/2 cup butter at room temperature (I used the Westgold brand)
- 3 scoops of vanilla protein powder (I used Bulk Nutrients collagen whey for this
one) - 1/2 cup of Greek Yoghurt (I used plain YoPro Greek Yoghurt)
- 3 large eggs
- 2 medium apples (can used tinned apple as well)
- 1/4 cup milk (any kind, I used Zymil Skim)
- 1/4 cup chia seeds
- ¼ cup granola (I used Farmer Jo Gluten Free Granola Nutty Chai & Coconut)
Instructions
- Preheat oven to 220°C
- In a large bowl, whisk the flour, baking powder, cinnamon, ginger and salt
- In a separate bowl, beat the butter until smooth
- Add in the yoghurt and eggs and beat until combined
- Pour in the dry ingredients and beat until about combined
- Add in the milk and continue to beat until combined
- Fold in chopped apple pieces and granola (add desirable amount and any
other additives of choice) - Pour the batter the in the pan and bake for about 25-30 minutes, or until the top
is set and a toothpick comes out clean - Allow for it to cool for at least 20-30 minutes before serving
