High Protein Choc Cherry Brownies

There are brownies… and then there are these brownies – fudgy, rich, chocolatey and studded with juicy cherries, but with a sneaky protein upgrade. If you’re someone who wants the that sweet treat but still have protein goals to hit, this is one of those recipes that feels indulgent but actually works in your favour.

Each slice clocks in at around 16g protein, thanks to the protein powder, Greek yoghurt and eggs – so you get that proper brownie satisfaction without the sugar crash and snack-hunt half an hour later. I make a batch, slice it into six and keep them in the fridge for the week – they’re perfect for morning tea, post training snack or even a high protein
dessert.

You can fold in extra chocolate if you want it more decadent, or leave it out and let the cherries do the work. Either way, this is one of those recipes that earns its spot on repeat.

Remember to save a few cherries (if you can) for serving or finish with a light dust of icing sugar, a drizzle of maple syrup or honey.
Keep in an airtight container in the fridge for around 5 days. They firm up a little when cold (honestly delicious that way), but you can warm a slice in the microwave for 30 seconds if you want it soft and gooey again. They also freeze well, wrap individually
and thaw overnight for grab-and-go snacks.
Ingredients

  • 1 cup all-purpose flour (I used GF)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter at room temperature (I used Westgold Butter Salted)
  • 3 scoops of chocolate protein powder (I used NoWay Collagen protein)
  • 3-4 squares of chocolate chopped (optional)
  • Pitted Morell cherries (desired amount, I used about half a cup
  • 1/2 cup of Greek Yoghurt (I used Chobani)
  • 2 large eggs
  • 1 teaspoons vanilla extract
  • 1/4 cup milk (any kind, I used Zymil Skim)

Instructions

  • 1. Preheat oven to 220°C
  • 2. In a large bowl, whisk the flour, baking powder, baking soda and salt
  • 3. In a separate bowl, beat the butter until smooth
  • 4. Add in the yoghurt, eggs and vanilla and beat until combined
  • 5. Pour in the dry ingredients and beat until about combined
  • 6. Add in the milk and continue to beat until combined
  • 7. Fold in chopped chocolate pieces and cherries (add desirable amount and any
    other additives of choice)
  • 8. Pour the batter the in the pan and bake for about 25-30 minutes, or until the top is set and a toothpick comes out clean
  • 9. Allow brownies to cool for at least 20-30 minutes before serving
